This recipe was probably imported by the barbarian populations from the East after the fall of the Roman Empire. Tortelli alla Lastra is offered with different stuffings depending on the season and palates. In addition to spinach, they are also offered with potatoes, kale, wild herbs, yellow squash. This dish is a specialty strictly linked to the communities of Badia Prataglia, Bagno di Romagna, San Piero in Bagno, located on the Apennines, on the border between Emilia Romagna and Tuscany and surrounded by the beauty of the National Park of Casentinesi Forests. I suggest to pair tortelli alla lastra with a local red wine, sangiovese di Romagna If you want to cook along here the ingredients: 2 cups (250g) flour 0 or all-purpose flour 1 tbsp (10 g) extra virgin olive oil 1/2 cup + and 1 tbsp (150g) warm water 1 teaspoon of fine salt Stuffing: 1 clove of garlic 3 tbsp raisins 1 teaspoon of fine salt black pepper 1 tbsp extra virgin olive oil 10 oz (300 g) frozen spinach Tools rolling pin (essential) pasta board 2 medium non stick frypan a small saucepan a wooden spoon a sharp knife or a pasta wheel a fork a large bowl a plastic bag or wrap Disclaimer: this dish is vegan friendly
