Today we will learn about one of the most important Peruvian ingredients , and also fundamental for most Peruvian dishes, the “Aji amarillo” or Peruvian yellow chili, we will teach you two recipients based on this product, and tell you some stories behind both dishes. Thanks so much For 2 servings Aji de Gallina 1 chicken breast boiled and shredded 2 onions (red or white) chopped small 4 Peruvian yellow chilies (as an alternative you can use habanero chili, or scotch bonnet chili, other alternative is the pre-made yellow chili paste you can buy at Hispanic bodegas) 1 glass of evaporated milk (if you don’t have it you can use regular milk) 4 slices of white bread 1 boiled hard egg 2 black olives 1 table spoon of garlic paste Pecans (optional) Cooking oil (Vegetable oil) 1 tablespoon of sugar Pepper , cumin, and salt to the taste It comes served with boiled white rice Papa a la Huancaina 4 white potatoes boiled 4 Peruvian yellow chilies (as an alternative you can use habanero chili, or scotch bonnet chili, other alternative is the pre-made yellow chili paste you can buy at Hispanic bodegas) 1 glass of evaporated milk 8 salty soda crackers (or 4 slices or bread) 200gr of fresh white cheese Cooking oil (vegetable oil) 1 table spoon of sugar Salt and pepper to the taste 2 lettuce leaves 2 black olives Tip: buy disposable gloves or save a small plastic bag to protect your hands while deseeding the chili. Excellent cooking class with Vanessa abs her lovely husband who cooked while Vanessa gave us information about the ingredients and a little history of the food. I have taken many of their classes both cooking and touring and I always have a great time.

I love to see how other cultures eat, so Vanessa taking us into her home was fantastic. This time we even met her lovely daughter as well as her husband who does the cooking. Now to try and cook this meal.
