Water and flour: just two ingredients are needed to make Strozzapreti, a fresh pasta without eggs, with a rustic flavor that is part of the culinary tradition of my region. The Strozzapreti of Romagna is a kind of rolled hand made fresh pasta, where the stripes of dough are roughly twisted by hand, one by one. Their particular shape is appreciated because it is perfect to well retain the seasoning. This pasta has ancient and peasant origins: a popular legend dates the curious name back to the times when the Papal States dominated central Italy by imposing high taxes on the poor people. This cooking class will take advantage of one of the most versatile seasonal vegetables in the kitchen, for a main course with irresistible creaminess: Strozzapreti cream and asparagus Try to make this homemade pasta, no matter if it is imperfect, its simple and genuine taste will conquer everyone! If you want to cook along with me, please join the virtual cooking class with the following ingredients and equipment: INGREDIENTS for 2 people 250 grams of plain flour ( number 0 or 1) 1/2 cup (125 ml) warm water 1 teaspoon of fine salt extra flour to spread on the tray an handful of coarse salt for boiling water 1 leek 1 box of fresh cream (200/250ml) 200g asparagus (fresh are perfect but frozen are fine as well) 2 tbsp (30g) butter black pepper as taste grated parmesan TOOLS a rolling pin or a bottle a plastic bag or wrap 1 big bowl 1 chopping board 1 big tray or 2 medium trays 1 big pot 1 medium frypan 1 sharp knife 1 mesh skimmers or a big spoon with holes 1 wooden spoon
