The Italian tradition of seafood cuisine boasts many important recipes , among which one of the most famous is certainly the Spaghetti allo Scoglio. In this typical Mediterranean recipe are concentrated all the scents of the sea that season spaghetti, sautéed to absorb the flavor and become even more appetizing. There are many versions of spaghetti allo scoglio , what I will propose in this lesson is my version, handed down from my grandmother to my mother and then to me. so get ready for this wonderful dip in the Mediterranean cuisine with one of the most fascinating dishes of Italian culture! If you want to cook along with me please make sure to join the virtual cooking class in time and come equipped with the following ingredients: INGREDIENTS 200 gr spaghetti about 500 gr mussels with the shells already well cleaned ( or frozen one ) about 500 gr clams with the shells already cleaned from the sand ( or frozen one ) 4 scampi 6/10 shrimps depending on the size 200 gr squids 200 gr cherry tomatoes 2 tbsp extra virgin olive oil 1 or 2 cloves garlic 1 or 2 tbsp chopped parsley 1 glass still white wine salt to taste pepper to taste fresh or dry chilly pepper (optional) to taste Handfull coarse salt for boiling spaghetti TOOLS a chopping board a sharp knife a big pot 1 medium frying pan 1 saucepan 1 big pan for cooking mussels and clams TIPS ABOUT HOW TO CLEAN MUSSELS AND CLAMS Start by cleaning clams, it require about 4 - 5 hours. Place a colander in a bowl, so that it does not touch the bottom and filled with cold running water and a couple of tbsp of salt, leaving the clams covered by a layer of water for a few hour to expel the excess sand. Discard the water and repeat the operation during this this time. Then go to the cleaning of mussels: remove the impurities on the valves helping you with the back of a blade if they are very resistant and tearing away the byssus, that is the "beard" part that comes out. Then help yourself with a new steel straw and scrape away impurities. It may happen that the shell of some clams contains only sand, to be sure that it is not so, beat the shell with determination but without too much force on a cutting board, making sure that the cut is downward, if you notice a black spot on the cutting board it means that it is full of sand and should therefore be discarded, still do a test with a knife to see if it actually contains sand.
