Due to the five centuries of Ottoman rule in Macedonia, the way of life here and with that, the Macedonian cuisine has been heavily influenced by Turkish cuisine. Some of the Turkish dishes were adopted according to the tastes of the local people (by adding pork meat), but some of the dishes were accepted as they were. That was the case with this dish, which in Turkey is known as Menemen, and in Macedonia as Summer Stew. It's very simple and easy to prepare and although in some cases you can add meat to it, it's generally prepared as a vegetarian dish. Dominantly served as breakfast, this dish can be easily served as a light lunch or dinner. In my family, we want it served with yogurt, sour cream, or sour milk. These are the necessary ingredients for this dish: - green peppers - tomatoes - eggs - oil - salt Step 1: Remove the seed from the peppers, finely chop the peppers, and put them to fry in oil. If necessary, add oil so that your peppers do not get burned (if the peppers get burned a little, that's not a problem). Step 2: Meanwhile, cut the tomatoes into smaller pieces. Step 3: Once the peppers are well fried, add the tomatoes and continue frying. Step 4: Add salt to taste. Step 5: When everything is nicely fried, add the eggs, (the number of eggs depending on the amount of vegetables). Step 6: Stir, fry a little more and it is ready ;) Serve with slices of bread and yogurt, sour cream, or sour milk. BON APPETIT

Enjoyed being with Zoran & Betty & their lovely dogs there is a lot of laughter & banter between them both and with us it’s like visiting with friends cooking & eating together. The food looked delicious wished I could have eaten some. Such a pleasure and look forward to the next one 😁 💙💜 🌟🌟🌟🌟🌟

I really enjoyed the cookery demonstration with Zoran this evening. He and his wife are great fun and there was a lot of laughter and banter between us on the tour and them. The dish he cooked looked delicious, but I will go for another just for entertainment value!!

What a delight, and boy did this make me hungry! I loved how both Zoran and his cooking assistant (/cooking boss??) hehee bounced off each other and one could be stirring whilst the other responded to all the comments and questions in the chat. Lovely concept.

I love to see Zoren and his lovely wife, Betty each Monday. They uplift the spirits each time- never a dull moment. They bring attention to Macedonian cuisine and history with Zoren's tours. They will always say something to make you laugh- again a great way to start off Mondays :D
