About the tour

The sofrito base is the soul of Spanish cuisine. In this cooking class, you will learn the secret to make an amazing sofrito that you can then use to cook all sorts of dishes, from paella to traditional stews. In this case, we will make one of Nicolas and María's favorite recipes: potaje de garbanzos con langostinos (chickpea and prawn stew). You can freeze the remaining sofrito and save it for part 2, when we will cook another traditional dish. But there's more! This is a bilingual class, in which master chef María will talk in Spanish and Nicolas will translate to English for you. It's an ideal trip if you are studying Spanish and want to improve your skills, or perhaps you just like the sympathy and good humor so characteristic of Andalusia. Join Nicolás and María in this cooking/Spanish class and discover the secrets of Andalusian gastronomy, while enjoying the special charm of our land! Meet Nicolas

In Seville was he born, a pleasant city, Famous for oranges and women—he Who has not seen it will be much to pity, So says the proverb—and I quite agree Well pity no more, for Nicolas is here to show the wonders of Seville. Like Byron’s Don Juan, he was born and raised by the mighty Guadalquivir, under the shadow of the Giralda. A life-long lover of old books and obscure maps, he traveled the world from Lisbon to Philippines in his younger years, studying the history of the Spanish empire in the Pacific Ocean. He then came back home to sunny Seville and took up the ancient art of story-telling, entertaining travelers from all around the world with tales about poet-kings and honey thieves, orange trees and Manila shawls, lost libraries and wayward nuns. Join him as he guides you through the narrow streets of Seville’s Old Quarter and discover the light and music of this unforgettable city!
