Fried Pizza, I can say that this is one of the best ways to eat pizza, perfect when you just want to do something different and have fun! This is an old recipe when the pizza dough was fried and seasoned right on the pan, of course, you have to challenge the hot oil drops! My grandma from who I have the name was used to cook those pizzette on November 2nd, it was a tradition in Positano, to cook them for the commemoration of the dead people, and when we were kids we were waiting that day almost like Christmas! Here you have the ingredients and if you want to cook with me, please provide: Pizzette fritte – Fried little pizzas Ingredients: For the Pizza Dough o,8 liter (27 oz) of warm water 25 G (0,88 oz) yeast 30 G (1 oz) salt 30 G (1 oz) extra virgin olive oil 1 KG (35 oz) all purpouse flour Tomato sauce Mozzarella Basil Grated parmesan cheese Vegetable oil Preparation: In a large bowl, mix the yeast in warm water until fully dissolved. ADD THE SALT AND THE OLIVE OIL. In another bowl add the flour, salt, and olive oil. Add the water with the yeast a little at a time and start to mix with hands. When you have a smooth and elastic dough you can keep working on it for another 15 minutes. Divide the dough into smaller balls and work briefly to make it into round balls. In a large frying pan add the oil and heat. Flatten the small ball into a circle and put it in the pan. Turn the pizza on the other side when gold. Add the tomato sauce and the cubed mozzarella, grated parmesan cheese, and a leaf of basil. SERVE HOT.
