Parmigiana, known as Parmigiana di Melanzane or Melanzane alla Parmigiana, is a classic Italian dish made with thinly sliced, floured and fried eggplant layered with tomato sauce and cheese and baked in the oven. Parmigiana made with a filling of eggplant is the earliest and still unique Italian version. Pepe nero q.b. Basilico qualche foglia Sale fino q.b. Fry oil to fry eggplants Coarse salt to bled the eggplants 35 g
Sara is a roman native, traveller, dreamer, addicted to painting and fascinated by all expressions of art. She graduated with a degree in foreign languages at the "Roma Tre" University and after finishing she started to travel to many countries to improve her knowledge, accent and professional skills. She loves her career as a guide and finds it incredibly interesting. She has worked for several cruise tour operators such as royal Caribbean, Carnival, Celebrity cruises, Princess Cruises, Norwegian Cruise Lines and Riviera. In 2011 she embarked on a new and exciting experience guiding students in cooperation with Palazzi-Florence association for International Education and EF students. Sara gave a great cooking class on an iconic dish - and I learned a new way to cook eggplant parmesan that is so easy. Even my picky 16 year old gobbled it up - Sara is a charming guide and very knowledgeable about Italy - highly recommended!
