Parmigiana, known as Parmigiana di Melanzane or Melanzane alla Parmigiana, is a classic Italian dish made with thinly sliced, floured and fried eggplant layered with tomato sauce and cheese and baked in the oven. Parmigiana made with a filling of eggplant is the earliest and still unique Italian version. I will invite you in my Roman kitchen to cook something really yummy Ingredients: Black melanzane 750 g (black 4/5eggplants) Tomatoe sauce 1 bottle or can Mozzarella cheese 250 g ( 1 mozzarella) Parmigiano Reggiano DOP 75g Cipolle dorate 1 Olio extravergine d'oliva q.b. Pepe nero q.b. Basilico qualche foglia Sale fino q.b. Fry oil to fry eggplants Coarse salt to bled the eggplants 35 g
Sara is a roman native, traveller, dreamer, addicted to painting and fascinated by all expressions of art. She is a licensed tour guide of Rome and the Vatican, speaks fluent English, French and Spanish and at school also learnt some German! Not only does Sara love languages but foreign cultures and traditions too. She graduated with a degree in foreign languages at the "Roma Tre" University and after finishing she started to travel to many countries to improve her knowledge, accent and professional skills. She loves her career as a guide and finds it incredibly interesting. She has worked for several cruise tour operators such as royal Caribbean, Carnival, Celebrity cruises, Princess Cruises, Norwegian Cruise Lines and Riviera. In 2011 she embarked on a new and exciting experience guiding students in cooperation with Palazzi-Florence association for International Education and EF students. Sara knows her city like the back of her hand and can't wait to show you around!

loved the demo last night - you were enthusiastic and the dish looked great I shall try it soon - i loved the fat that yo seemed bit chaotic at times -- I mean that as compliment because you made it REAL not too slick/perfect etc for us not so good cooks ! thanks again ( I'm already booked n another of your classes )

Full marks to Sara for trying cooking lessons on line. It can't have been easy. I felt like I really was in her kitchen and she was cooking my favourite Italian dish. Very interesting to see her version of the dish. Now I can see where I have been going wrong. Loved the comments from her Mum during the lesson in Italian on the chat. All in all a thoroughly enjoyable hour spent in Sara's excellent company. Have already booked some more cooking sessions. Virtual trips is becoming like my favourite TV channel!!
