About the tour

We all have a recipe that we keep close to our heart, but there is one recipe that can make youngsters and oldsters agree: meatballs! Originally invented as a way to recycle leftovers from the day before, meatballs can be created with anything from your cupboard and fridge: meat, vegetables, fish, legumes... and the way to cook them are equally various ! For this recipe, I want to share with you how my mother used (and still does) to cook them when I was a child : meatballs with tomato sauce. Keep in mind that with this recipe it’s crucial to serve on the table a good loaf of homemade bread for the final “scarpetta”, an essential custom for this amazing dish ! In you like to cook along with me here the list of the ingredients and tools INGREDIENTS for 2 people For the meatballs 2/3 cup (150gr) of minced pork 2/3 cup (150g) of minced beef 1 egg 2 tablespoon of parmesan cheese 2 tablespoon of ricotta cheese OR 2 tbsp (30 g) of dry bread soaked in milk 1 slice of mortadella or baked ham garlic 1/4 clove 1 tbsp chopped parsley 1/2 teaspoon nutmeg or a grated sprinkle fine salt at taste black pepper at taste For the sauce 3 tablespoons of extra vergine olive oil 1/2 carrot 1/2 stalk of celery 1/2 onion depending on size 2 cups (500g) tomato sauce (passata) fine salt to taste black pepper to taste Tools chopping board a medium bowl medium sauce pan a sharp knife a wooden spoon a spoon preparation time 30 minutes cooking time 40
