My wife and I are food lovers and we both come from families that still preserve some methods and the use of ingredients from the Mexican culinary tradition, it should be noted that we are not expert cooks, but cooking is one of several activities that we enjoy doing as a couple and we want to invite you to our kitchen to teach you some recipes and the culinary secrets of our families. In each class we will elaborate a different recipe of what is cooked in the home of a common Mexican family. The recipes may or may not be vegan and may or may not contain spicy ingredients (types of chili)
Ernie has been working in tourism and recreation for over ten years. He began guiding in "cantinas" tours, and since then he became a certified guide and created several historic tours and walks in archeological areas. He is a food lover so any tour can turn into a gastronomic experience in a moment! He considers himself an ambassador of México, is an amateur photgrapher and a big fan of cinema

Great cooking experience with you and Jackie. The only thing I would suggest so that you don’t get so many questions that interrupt your flow, tell us what you have in the pots and what you did to the items. You probably don’t realize it but you didn’t tell us what you put in each pot. The only thing you mentioned was tomatillos and tomatoes. People started questioning when you started putting the contents of the pots in the blender. Another good idea would be to show a tomatillo with its papery cover so that people know what it looks like. In Canada we can find them in certain stores but I don’t know if they can in England for example. By showing us what they look like before you remove the husk, again you avoid questions. Another thing, if people don’t ask about washing the tomatillo we wouldn’t have known it was necessary. You asked for suggestions, so I kindly suggested a few above. We enjoyed the chalupas and plan to make them in the future without the pork fat and roasting the chiles, the tomatoes and the onions, instead of boiling them, as the roasting gives added flavour.
