In Egypt, we love to eat a hearty breakfast! You can buy amazing Tahmayia (felafal) sandwiches from the street vendors, plus fuul (stewed fava beans) to take home and enjoy with fried eggs and salad! If you have ever wondered how to make this filling spread at home I would like to show you! I will take you through a step by step tutorial of how to prepare and make this amazing breakfast from the comfort of your own kitchen :-)
Lesley has been living in Egypt for more than 22 years and loves to explore the local areas of the city of Luxor. She has been leading hiking tours around Luxor now for more than 5 years and specialises in taking people off the beaten track to the agricultural areas and desert that skirt the ancient sites.

At last, a visual aid to making felafal. Lesley broke the methods down for us, right down to soaking the Fava beans for hours, and grinding the herbs and spices. A lot of work so it was useful to learn that this could be frozen ready for another meal. Her cats were delightful!
