In my city there's an iconic dish, a real crowd pleaser. An opulent, hot, meat and cheese sandwich, covered in a delicious sauce, which everyone has to try when visiting Porto: the famous "Francesinha"! In this cooking class we'll go far and beyond, offering an opportunity that not even the locals have, as the most reputed brewery restaurant of the city opens its kitchen exclusively, just for us. What a unique privilege. Together, we'll learn the history and secrets behind this local delicacy, as we cook one, live. Are you already mouth watering?! Ingredients Sandwich: 2 slices of good form bread 2 fresh "linguiça" (grilled) 2 fresh sausage (grilled) 1 slice smoked ham 1 slice sweet pork ham 1 slice of "salpicão" 6 slices of edam cheese ¼ inch thick grilled beef steak Sauce: (if you want to cook live with us, prepare the sauce in advance, as it has to simmer for about 2 hours). ¼ cup milk 1 tablespoon corn starch 12 ounces beer 2 tablespoons butter 2 tablespoons tomato paste ¼ cup Port wine 1 beef stock cube 1 bay leaf salt and pepper to taste Optional: Sunny fried egg on top French fries, on the side Instructions: 1) Preheat the oven to very hot (250°C | 480F°). 2) In a small bowl, dissolve the corn starch in 2 tablespoons of the milk. Stir to make certain there are no lumps and set aside. 3) In a sauce pan melt the butter on medium low heat. Add in the tomato paste and stir well. Pour in the rest of the milk, beer, Port, and add in the bay leaf and beef stock. Increase the heat to medium high and bring to a boil, stirring frequently. Turn off the heat and discard the bay leaf. Stir the corn starch and milk mixture again and add it to the sauce, stirring well. Set aside. 4) Assemble the sandwich. 5) Place the dish into the preheated oven and allow the cheese to melt, about 5-10 minutes. 6) Remove the Francesinha from the oven and pour the very warm sauce on top, generously. Ready to enjoy!
