About the tour

Over the centuries, living in tyranny in difficult conditions and poverty, Macedonian families were forced to prepare simple meals from what they had, and the beans with high nutrition value were among the things they had in abundance. Simply cooked with spices, it allowed large families to survive. Even today, there is a tradition in Macedonian families that beans should be prepared at least once a week, usually on Fridays. INGREDIENTS: - 300gr white beans - salt - flour - onion - dried vegetable spice INSTRUCTIONS: STEP1: Soak the white beans in water overnight STEP2: Next day, through the water, where the beans were soaking. Put the beans into a saucepan and cover them with new cold water (the water should be 5-6 fingers over the beans). Bring to a boil. STEP3: Once it boils, drain the water from the beans, wash them from the foam that was formed during the cooking, and once again cover the beans with clean cold water. STEP4: Chop the onion and add it into the pot with the beans. STEP5: Bring to the boil, and simmer until the beans get soft. STEP6: Prepare the roux. Add oil (olive or sunflower) into a frying pan, just enough to cover the bottom of the pan. Once hot, add 1tbsp flour and stir into the oil. Add about 2tbsp powdered paprika and stir. Pour this into the saucepan with water, beans, and onion. Add 1,5tsp dried vegetable spice and simmer for 5 minutes. STEP7: Use a slotted spoon to transfer the beans into a casserole dish, and then cover the beans with some of the spiced water from the saucepan. STEP8: Put the casserole in the oven for around 30min, at 250C. STEP9: Garnish with parsley. STEP10: Serve with bread and fresh salad. BON APPETIT
