PESTO SAUCE After strolling around some villages of the Cinque Terre National Park, I guess is the time to learn somenthing more about the ligurian cuisine, so, here we are with our first lesson, the original ligurian pesto sauce. This recipe was given to me from one of my best friend and she is 100% ligurian, from Genoa. There is a long history behind the basil, one of the most common but most pecious aromatic herb, you will be very impressed how important is this parfumed green gold. Here you have the ingredients and if you want to prepare the pesto live with me, please provide: 2 Garlic Cloves Sea Salt 1 Pinch Exta virgin olive oil 80 ml/ 3 oz 100 grams/3,5 oz of basil leaves Pecorino cheese 30 GRAMS (2 TBSP) Pine Nuts 1 Tablespoon Grated Parmesan Cheese 70 GRAMS (6 TBSP)
